Tomato, Feta Couscous Salad
Looking for the ideal easy, fast, cheap, nutritious, delicious dinner option? This salad can literally be thrown together in 15 minutes and it ticks all these boxes too! For a light, summery, filling salad that’s packed with good stuff, try this one as a side or main for your next midweek meal!
Ingredients
1 cucumber
2-3 ripe tomatoes
1 tin of lentils, drained
½ cup of olives
1 packet of feta (containing non-animal rennet)
1 cup of couscous
Olive oil
Balsamic Vinegar
Oregano
Directions
Boil a kettle and add the couscous and 1 cup of boiling water to a container. Leave to stand for 10 minutes, then fluff with a fork and it will be ready to eat! While it rests, dice all the vegetables, cube the feta, and add with the lentils to a large bowl. Add the couscous, once cooked, and then add a good drizzle of balsamic vinegar and olive oil. Garnish with oregano (fresh is ideal, and very easy to grow at home all year round). Mix to combine and serve!
This salad is a very cost effective option and, excluding pantry staples such as oil and vinegar, this dish can cost around $16-20, or $3.50-$5 per person. Bear in mind, that if you’re making this salad regularly, the olives and couscous can be used over several weeks, saving you on your weekly shop!
